The transport of  perishable goods was very difficult, if not impossible before railroading. The development of reefer cars allowed the transport of many perishable goods. This allowed people far away from where food was produced to have access that was previously impossible. The development of reefer cars has continued from the original ice wood reefers to today’s large mechanical reefers capable of carrying several times the amount of goods.
